Cheese scones

Ingredients:

12oz plain flour
2 tsp baking powder
2oz butter
2 eggs
4 tablespoons milk
4oz mature cheddar, grated
Seasoning:
choose from mustard, cayenne pepper, paprika, salt, pepper

Method:

Sift the flour and add the other dry ingredients;
rub in the butter
add the eggs and milk and mix together until the bowl is clean, adding a little more milk if too dry
Mix in the grated cheese.
press dough out on a board into a circle about 1 inch deep
mark the dough on the top with a knife into the number of portions you want
(or roll out and cut with a biscuit cutter if you can be bovvered)
Cook at gas mark 6 until golden brown
Allow to cool slightly and eat while fresh

Variations:

add some sliced tomatoes and more cheese to the top part way through cooking

Serve:
Serve with salad, or home made baked beans, or pickled beetroot.
