| Cauliflower
and Coriander Curry Serves 4 |

| Ingredients: |
one cauliflower
one large onion
four cloves of garlic
2 inch piece of root ginger
6 tbsp oil
3 tomatoes
2 medium hot chillis
A bunch of fresh coriander |
| Method: |
Boil or fry the cauliflower chopped
into florets until just tender
Puree the garlic, ginger, onion and tomatoes in a food processor
Heat the oil and then fry the puree in the oil whilst adding the spices
Just before serving add the coriander (chopped) and the fried or boiled cauliflower
and heat through. |
| Variations: |
Use other vegetables as well or
in place of the cauliflower.
Use fresh herbs and spices where possible for the best flavour.
I spent years trying to make curries that got nowhere near authentic indian cuisine,
but this recipe is excellent and so easy. |
| Serve: |
| Serve with rice and naan bread, and
garnish with cashew nuts for extra texture and
raisins for sweetness, and plain yogurt for coolness. |
