Pesto Serves 4
Vegan? No :-(
Ingredients:

one large pot of basil
one clove of garlic
one tablespoon of pine nuts
good quality olive oil
1oz parmesan cheese

Method:

Chop the basil, chop or crush the garlic, crush the pine nuts and combine
add a few tablespons of olive oil to a good consistency and stir in the cheese finely grated.

Variations:

Substitute some finely chopped sun-dried tomatoes for some of the basil. Other hard Italian cheeses will be OK in place of parmesan.

Serve:
Serve with authentic Italian spaghetti, home cooked bread or toast or garlic bread, and salad.
Top with grated parmesan (or cheddar) and black pepper
