Vegetable risotto Serves 4
Vegan? No
Ingredients:

2 mugs of basmati rice
1 bunch of spring onions
1 tbsp vegetable oil
1oz butter
2oz parmesan cheese
2 oz almonds, halved
two tomatoes
provencale herbs
black pepper
seasonal vegetables (optional)

Method:

wash the rice and drain
fry the spring onions (finely chopped) and the rice in the oil and butter until the rice is translucent
add boiling water and stir in
add the grated cheese, herbs, black pepper, almonds and chopped tomatoes;
keep adding more water as it is absorbed until the rice is cooked.

Variations:

add other vegetables such as aubergine, corgette, capsicum, onion, all lightly fried.

Serve:
with fresh bread
