Mixed bean soup Serves 6-8
Ingredients:

250g dried mixed beans
1 onion
2 cloves garlic
1 litre tomato juice
1 litre water
1 veggie stock cube
Optional:
salt n pepper
dash of ketchup and brown sauce
dash of balsamic vinegar
oregano or basil
finely chopped root ginger

Method:

Soak the beans overnight, then boil hard for 10 mins and then simmer until tender.
Chop and fry the onion and garlic
add the liquids and the stock cube
add the seasoning
Add the pre-cooked beans
Simmer

Variations:

add other left-over vegetables
add left-over pasta for a more substantial meal
For a thicker soup, don't add the water and simmer longer

Serve:
with home cooked bread or toast or garlic bread
Top with grated parmesan and black pepper
