Mozzarella, Avocado and Tomato salad Serves 4
Vegan? No
Ingredients:

2 ripe avocados
1 pack buffalo mozzarella
4 flavoursome tomatoes
4 sprigs of fresh basil
drizzle of extra virgin olive oil

Method:

Peel and slice the avocados and arrange in a fan shape on the plates;
Slice the mozzarella
Slice the tomatoes
Add a small sprig of basil leaves to each plate, or roughly chop and sprinkle
Drizzle with olive oil

Variations:

The key is in fresh quality ingredients and careful presentation

Serve:
With black pepper and grated parmesan
