For the sauce:
Blend the first four ingredients
Meanwhile dissolve the sugar in the vinegar on a low heat
add the remaining ingredients to the vinegar
add the blended ingredients (paste) and stir in.
For the rolls:
In a frying pan with boiling water, soften the rice paper sheets one at a time. Once soft add a selection of the salad ingredients, then roll.
Drizzle sauce over rolls and sprinkle with fresh herbs.
