Summer rolls with Sweet Chilli Sauce
Vegan? Yes
Ingredients:

For the rolls:

Rice paper
Rice noodles
Beansprouts
Peppers (capsicum)
Avocado
Cucumber
Salad leaves
Fresh corriander and mint
A selection of:
Sprouting beans
Mangetout
Green beans
Carrot

For the sweet chilli sauce:
2-3 hot red chillis
2 inches of ginger
4 cloves of garlic
Fresh coriander
Cider vinegar
4 table spoons
1 table spoon demerara sugar
Juice of one lemon
4 tablespoons of orange juice
1 tablespoon of soy sauce

Summer rolls with sweet chilli sauce



Method:

For the sauce:
Blend the first four ingredients
Meanwhile dissolve the sugar in the vinegar on a low heat
add the remaining ingredients to the vinegar
add the blended ingredients (paste) and stir in.

For the rolls:
In a frying pan with boiling water, soften the rice paper sheets one at a time. Once soft add a selection of the salad ingredients, then roll.

Drizzle sauce over rolls and sprinkle with fresh herbs.

Variations:

The sweet chilli sauce can be used with other dishes such as:
vegetable stir fry
cheesy tortilla wraps
dipping sauce for chips, raw veg sticks at parties
poured over a block of soft cheese and garnished with coriander for a special party dip (or blended together).

Add coconut milk to make a curry paste.

Serve:
Serve as a starter or a lunchtime summer dish al fresco on a hot day with white wine.
